7-up Cake

Seven-Up Cake, 7-Up Cake, Fairhope AL 7-Up Cake is a favorite around here and has such a light, lemon-lime, fizzy taste, I think it’s perfect for a hot summer day. I baked these cakes and used them as props for a photo shoot to accompany a newspaper story that will be printed next week. I’ll be sure to post it here soon after that.

But for now, here’s the easy-as-pie recipe (which I never understood, because I think cake is so much easier than pie).

7-Up Cake, seven-up cake, Fairhope Supply Co.

This recipe makes a huge amount of batter. I have a small bundt cake pan as well as a larger traditional size. I used this one recipe to fill both pans and made two cakes. Make sure you have a really large bowl to mix everything in.

7-Up cake recipe, seven-up cake recipe, Fairhope AL7-up Cake

Cake

3 sticks softened butter (1 1/2 cup)

3 cups sugar

5 large eggs

2 tablespoons fresh lemon juice

1 teaspoon vanilla

3 cups all-purpose flour

3/4 cup 7-up

Glaze

1-1/2 cups confectioners sugar

1 tablespoon lemon juice (or lime)

1 to 2 tablespoons 7-Up

Directions

Preheat oven to 350°. Grease and flour a 10 inch bundt cake pan or tube cake pan. In a large bowl, cream butter and sugar together. Add eggs one at a time. Beat in lemon juice and vanilla. Add small portions of flour, alternating with 7-up until it’s all incorporated. Pour batter into cake pan and bake for 60-70 minutes, or until a toothpick can be removed clean. Let cake cool for 20 minutes before removing to a rack. After completely cool, Mix glaze ingredients together, adding small amounts of 7-Up until the desired consistency is reached. Drizzle glaze over top and enjoy!

    I have — and it is very tasty! I took it to the first potluck I attended in Colorado, and everyone thought they had died and gone to heaven. It should be noted that folks up there rarely eat dessert or sugar. You are likely to get Cool Whip and strawberries if anything at all for dessert!

      May be that’s why they’ve resorted to smoking pot! If they’d try a little dessert, maybe that would make them happy!

      Some things are just suited for certain seasons. Gingerbread in the winter, and 7-Up cake in the summer!

    I love 7-Up pound cakes! Reading your post reminded me of the comedian, Jeannie Robertson. She tells a hilarious story about her husband..affectionately called Left Brain and a 7-Up pound cake she needed to make for a ill friend. You must look up the You-Tube video. You will love it!

      Yes, I also have miniature, individual bundt cake pans that I think would work great for little min-cakes. Either as a cute dessert, or a tiny little gift wrapped in pretty paper or a little box, they would make a great presentation.

    Although I don’t care for 7-Up, I love lemon pound cakes so I bet I would love this! PS Your comment about the folks in Colorado needing to eat more dessert so they don’t need to smoke pot cracked me up! Have a great week!

    I did make this cake when my son was growing up but now that it’s an empty nest I hardly ever make cakes or pies, only for birthdays or holidays. Glad you posted this because it is a perfect cake for this hot summer and I think I will make this for a weekend when we have friends over. Thanks for sharing this……..
