The governor issued a state-of -emergency warning for the flu in the state of Alabama. My doctor’s office was slam-out of the flu vaccine. The local hospital is at over-flow and turning patients away who are only slightly ill – you know like having a baby and things like that. “Come back next week!” And the final proof that we’re all dying in Alabama is that our church has cancelled Wednesday night dinners. That’s a sure sign a plague has descended upon us.
Now, there’s so much ice on the road (hardly any at all) schools have closed two days in a row.
Locusts and frogs are next.
No one likes being sick, and I’m trying hard to avoid it. As much as I think I’ll stay home away from the germs, I keep finding reasons I ABSOLUTELY MUST run out into the germ-infested public. I had to go to the fabric store – new curtains can’t wait! I had to go to the jewelry store to have new charms added to my bracelet — what, like I was going to put that off? Then, I had to go to Piggly Wiggly because I keep thinking of good things to cook. Soups, stews, chili . . . all those things northerners usually eat when its cold and we usually find they heat us up too much.
I’ve attempted to find recipes with big punches of ANTIOXIDENTS to fight off the germs. Of course, I still drink my veggie-fruit shake with BEETS – yum. But I’ve also looked for new ways to use powerful fruits and veggies.
This isn’t really a recipe, except that I used an easy recipe for blueberry vinaigrette, and instead of using it on a traditional salad, used it in this chicken dish. I layered pasta, then grilled chicken topped with the blueberry vinaigrette, and finally topped it all with multi-colored peppers, squash, tomatoes, onions, garlic, and almonds, then baked it and served it with a salad The blueberry dressing is savory because of the balsamic vinegar. Before I baked it, I put a few slices of goat cheese on the top to melt. It was very good and something different even the teenage boy loved.
Blueberry Vinaigrette Dressing:
1 cup blueberries – (I increased this to 1 and 1/2).
1/2 cup balsamic vinegar
2 Tablespoons olive oil
1 Tablespoon dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
